Mezcal is a Mexican drink that quickly becomes more popular throughout the country and throughout the world.
Its greater acceptance in all social and economic strata is, to a large extent, due to the fact that a large number of “mezcalerías” (places where mezcal is sold) have opened their doors in Mexico,
which offer this drink in pleasant spaces within which you can have a good time with friends tasting the exquisite mezcal. Mezcal, like tequila, is a distillate of agave, although its flavor is very different.
Until a few years ago this liquor was considered a drink for people of economically low class, however little by little it was acquiring more prestige due to its delicious flavor. Currently, mezcal is consumed throughout Mexico and its acceptance also grows in some countries in Europe, Asia, the United States and Canada.
The process of elaboration of mezcal is complex since it is necessary to plant and take care of the agave until it reaches the time of maturation, which implies an enormous effort. Afterwards, the leaves and root of the plant must be removed, leaving only the heart, which is subjected to fire in large rustic ovens. Then the hearts of the agave are cut into smaller pieces which are crushed in special mills.
The ground agave is placed in clay pots for several days to ferment. Then the solid matter is separated from the liquid which is subjected to a traditional and traditional distillation process. The liquid that is obtained is the delicious mezcal.
